Caffe Boa planning rabbit-based Easter menu

Caffe Boa, long noted for its creative use of local, organic and fresh ingredients, will celebrate Easter with a special brunch, as well as a six-course, prix-fixe, rabbit-based dinner.

The Easter Bunny better steer clear.

Both locations - the original in Tempe, and the Caffe Boa Bistro in Mesa - will offer an a la carte brunch of rabbit loin "Canadian bacon" eggs Benedict, brioche French toast and garlic scrambled eggs with salmon and warm cream cheese, from 11 a.m. to 3 p.m. The brunch is a la carte (with dishes ranging from about $9 to $12). Bottomless mimosas are an additional $19.95.

Caffe Boa executive chef Payton Curry, inspired by the tales of Alice in Wonderland, is preparing a six-course dinner based primarily on rabbit, which is appearing on the menus of more and more restaurants. Dinner is available from 11 a.m. to 10 p.m. and costs $65.

The dinners will consist of:

• Carrot soup with carrot soup with crispy rabbit confit.

• Rabbit-liver mousse crostini, fines herbes salad, quince mostarda, horseradish crème fraiche.

• Rabbit terrine with black truffle, celery root and parsnip slaw, black pepper buttermilk vinaigrette, brioche.

• Ravioli of rabbit, local beet pasta, arugula-walnut pesto, local radish slaw.

• Prosciutto-wrapped rabbit leg, white truffle omelet, braised black eyed peas.

• And, for dessert, carrot cake.

There is an alternative menu available for children. Reservations are required.
